VinificationManual harvest, pneumatic pressing.
Clarification vinification heat regulated at 20°, fermentation during three weeks.
When the alcoholic fermentation is over, malolactic fermentation starts: the malic acid is degraded into lactic acid, it allows to lawer the wine acidity and avoid fermentation in the bottle.
Thanks to this you have round wines with a long finish in palate and you can keep them longer.

Aire de ProductionThe chosen territory for Mondeuse is Arbin. On the side of the mountain "La Savoyarde", the hillsides are facing south. These old vineyards give Mondeuse. Partly (30 percent) aged in oak barrels, it's slightly woody with delicate tannins.

Nose : delicately spicy and peppered. Complex aroma of red and black berries (raspberry, blackcurrants and bilberry)
Palate : well balanced with peppered and fruity tannins, notes of vanilla.
